Few wineries focus on just one grape variety, let alone one that has often been out of fashion, but Bodegas Ximénez-Spínola have built their success, since 1729, working solely with and producing a fascinating array of dry, dessert and sherry wines from Pedro Ximénez. Their near 300 year expertise definitely shows!
Grapes are sun-dried for a minimum of 3 weeks, concentrating their sugar and flavours and providing an elegant, natural sweetness.
Colour with amber vibrancy, ripe grape and raisin on the nose. Fresh and velvety smooth entry on to the palate with a velvet with well integrated acidity alongside dates, fig and raisin flavours and a lengthy finish.
