This is a beautifully balanced Pedro Ximinez with fresh acidity bringing elegance to this classic dessert wine. PX can often be a bit cloying, but this is like velvet. The nose is layered with notes of figs, dark chocolate and roasted coffee, while the finish is rich and indulgent and a perfect match for dessert and blue cheese. Or simply pass around the table at the end of the meal. We’d recommend serving this lightly chilled.
